You need:

1 egg
1 tablespoons coconut flour
25 ml of rice milk
Pinch of salt
Coconut oil or ghee for the cooking

If you want the pancakes to become more fluffy, add a few grams of baking powder.

Method:

Stir the eggs with salt with a fork into a moderately deep bowl. Add coconut flour and rice milk, mix well.
The resulting mixture is rather liquid compared to the classic recipe and is sufficient for 5-7 pieces. small pancakes, depending on the size.
